Pambiche’s Bakery

Pambiche’s bakery is built out of a love for the craft of baking, years of dedication to the trade and a true knack for working with Cuban delicacies. At the helm are partners in pastry and co-owners of Pambiche, John Maribona and Roseanne Romaine.

The duet has been together since 1992 sugar coating dessert houses, patisseries, restaurants and bakeries all over the Portland Metro area, and in 2000 opened Pambiche together with partner Hada Salinas, bringing traditional Cuban desserts and pastries to Portland, Oregon.

Café Cubano

Pambiche’s Café Cubano is a tribute to Cuban coffee culture. The coffee’s distinct profile is achieved through the selection of a specific blend of beans whose attributes are akin to those grown in Cuba. Dark roasted and aromatic with hints of caramel, tobacco and spice, a rich, smooth full-bodied flavor, with gentle acidity and a long earthy finish.

For centuries sipping Café Cubano has been an ingrained part of Cuban society, where little coffee breaks throughout the day have been used to discuss people, problems and politics over mini cups of the sweet black brew. Conversations seem a bit sweeter, moods magically improve, batteries recharge and ideas just seem to flow when sipping on a shot of the sweet Cuban brew. So head down to Pambiche with a few friends to partake in the sacred Café Cubano ritual, relax and talk about whatever it is that ails you. ¡Salud!

Pambiche's exclusive Café Cubano Blend is provided by Stumptown Coffee Roasters.

Our coffee drinks are made with whole milk from rBST free cows that are raised on NW pastures. Coconut milk is available for $1If you like your coffee sweet we use pure cane sugar. All coffee drinks are available to go!

Plant Based Cubano

Cuban Cuisine’s earliest beginnings start with the native Taíno diet that consisted mostly of cultivated yuca and sweet potatoes, squash, beans and corn, peanuts, pineapple, and peppers along with other crops gathered from the wild such as yautía, guava and soursop. These foods remain present in today’s Cuban Creole Cuisine yet are often overshadowed by typical meat dishes that predominate the cuisine just as they do in American cuisine. Eating a plant centric diet is not a new concept to the Caribbean whose islands have been blessed with a wonderful array of natural foods that have sustained its peoples for centuries.  We want to bring the goodness of these ancestral foods to the forefront so that you can explore, enjoy and benefit from the goodness that is plant based Cuban creole.  ¡Buen Provecho!

Classic Cuban Cocktails

In the glory days of pre-revolutionary Cuba, famous Havana restaurants, bars and nightclubs such as Tropicana, La Floridita, Sloppy Joe’s and La Bodeguita del Medio were notorious for their exotic cocktails. In the days of prohibition North American tourists  flocked to Havana in search of the tropical Cuban lifestyle and of course, Cuban rum. It is from this period that such well-known cocktails as the Daiquirí, the Mojito and the Periodista Cocktail, earned their fame.

Here at Pambiche we return to La Habana’s days of yore when her streets were filled with the young appetite for life and the varied means of enjoying it. Our cocktails are made with housemade fruit juices, pure cane sugar and the expertise & love required to make classic Cuban cocktails. ¡Salud!
